Banana Nut Bites


2 Ripe Bananas

1/2 t vanilla

1/2 t cinnamon

2 Tbsp ground flax

1/4c gluten free oats

3 Tbsp coconut oil (melted)

Dark Chocolate Chips (optional :)

1c blueberries


1) Preheat oven to 350 degrees

2)Peel & mash bananas in a large bowl.

3) Add vanilla, cinnamon, flax, and walnuts, then stir.

4) Mix in oats & oil, then gently fold into blueberries.

5) Scoop 1/4 cup, and gently press down onto cookie sheet.

6) Bake 15-20 min, then cool on rack. Enjoy!
